Traditionally crafted, slow cured in natural well water, on the bone for at least 3 days to give the hams’ their distinctive flavour. They are then steam-cooked for up to 12 hours, allowing the flavours to mature and develop. Finally they are glazed with ground cloves, mustard and brown sugar, then flash roasted in the oven for a further 2 hours to give a wonderful finish.
